INGREDIENTS
1 lb of dry cod
5 oz of flour
Juice of 1/2 lemon
5 threads of saffron
1/2 tbsp of baking powder
Parsley to taste
3/4 cup of water
Salt to taste
PREPARATION
Soak the cod in cold water for 48 hours, changing the water 3 times. Drain it, remove the bones and dry it off. Place it in a bowl or plate and spray it with lemon juice.
Place the flour in a bowl; add the baking powder and salt and mix. Add the saffron, minced parsley and water, stirring until it is integrated and lump free.
Heat plenty of oil and pass pieces of fish through the breading, fry them in hot oil until they are browned all around. Drain over paper towels and serve.
