INGREDIENTS
A pinch of salt
2 lbs of cardoons
1 tbsp of flour
150 ml of beef broth
A pinch of pepper
5 oz of bacon
PREPARATION
Chop the cardoons, wash them and remove the threads.
Cook in boiling water with salt for 30 minutes in the pressure cooker. When they are tender, place the chopped bacon in a saucepan, fry it and remove them.
Place a tbsp of flour in that fat. When it turns a different color, add the broth, salt and a little of pepper. Simmer this sauce for 15 minutes add the cardoons and bacon. They will cook slowly.
Serve hot.
